Chocolate Peppermint Cookies

Now that Thanksgiving is over, Christmas has finally begun.  Celebrate this wondrous time with some ridiculously delicious cookies.

I'm telling you, these are really good.  So good that you should probably get on making them right now!  To help you with that endeavor, here is the recipe!

1/2 c. shortening
1/2 c. butter
1 c. brown sugar
1 c. white sugar
2 eggs
1 1/2 tsp. vanilla
1 tsp peppermint extract
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 1/2 c. flour
6 tbsp. cocoa powder (unsweetened)
12 oz. bag of milk chocolate chips
48 unwrapped Hershey's Candy Cane Kisses

Cream softened butter, shortening, brown sugar, and white sugar for 1-2 minutes until it is light and fluffy.  Add the eggs, vanilla, and the peppermint extract.

In a separate bowl, combine the baking powder, baking soda, salt, flour, and cocoa powder.

Combine the floury mixture into the butter/sugar mixture.  Then mix in the chocolate chips (I don't usually add the whole 12 oz....just add however much you feel like)

Refrigerate the dough for 30 minutes.  Then roll it into balls and you are ready to put them in the oven!

Bake at 350 for 10 minutes.

When you take them out of the oven, stick a kiss on each cookie.  Viola!  You are done.

Makes about 4 dozen cookies.
