Tikka Masala

Kylie and I decided that today is Curry Day!  We haven't made or even eaten curry for what seems like FOREVER, so the two of us decided to whip up our favorite recipe.  It is so good - tikka masala is for sure my favorite food!

It is really not that hard to make, so I am going to share with you the recipe in hopes that you try it out yourself!  Or you can invite me over and we will have a curry making party, that would be good too.

Chicken Tikka Masala
2 tbsp. butter
1 onion (chopped small)
4 tsp. garlic
1 tbsp. cumin
1 tsp. salt
1 tsp. ginger
1 tsp. cayenne pepper
1/2 tsp. ground cinnamon
1/4 tsp. ground turmeric
14 oz. tomato sauce
1 c. heavy whipping cream
2 tsp. paparika
1 tbsp. sugar

1 tbsp. canola oil
2 chicken breasts (or however much chicken you want)
1/2 tsp. curry powder
1/2 tsp. salt
1 tsp. sugar

Melt the butter in a large skillet over medium heat and add the onion.  Cook and stir for 5 minutes.

Stir in the garlic for 1 minute.

Stir in cumin, 1 tsp. of salt, ginger, cayenne pepper, cinnamon, and turmeric for 2 minutes.

Stir in tomato sauce, bring to a boil, then back down to a simmer.  Leave it simmering for 10 minutes.

Then add the cream, paparika, and 1 tbsp. of sugar.  Simmer for 13 more minutes 

While that is simmering, cook up the chicken!  Cube it and cook it in the oil and curry powder until the inside is no longer pink.

Add the chicken (and all of the juices in its pan) to the sauce and add the last 1/2 tsp. of salt and 1 tsp. sugar while you're at it.

Once the 13 minutes are up, you are done!  Serve over rice.

I do hope that you try this recipe so you can understand why I love my life so much.  It is highly likely that I've shed tears because of how much I love curry.
